These cookies are so good and addictive - seriously gingery, and well-spiced! The perfect cookie to bake for the holidays!
Ingredients:
- 2 tsp Anjali’s Chai Masala w/ Extra Ginger
- 2 ½ cups all-purpose flour
- ½ cup finely diced crystalized ginger
- 2 tsp baking soda
- ¼-½ tsp salt
- 14 tbsp room temp. salted butter
- 1 cup brown sugar
- 2 tsp grated fresh ginger
- ¼ tsp ground cloves
- ¼ cup molasses or brown rice syrup
- 1 egg at room temp.
Directions:
- Preheat oven to 350°F (175°C).
- In a medium-sized bowl, add the flour, crystalized ginger, baking soda, and salt, and mix together.
- In a large bowl, mix the butter and brown sugar together until creamy. Then add the fresh ginger, Anjali’s Chai Masala, ground cloves, molasses, and egg, and mix until combined.
- Add the dry mixture to the large bowl and mix until combined.
- Option 1: Form the dough into small, flattened balls. Roll the cookies in a shallow dish of sugar and place them on a parchment-lined baking sheet. Option 2: Roll out the dough and cut out shapes with cookie cutters (if the dough is too sticky to manage, pop it in the fridge and let it chill before rolling out). Place the cookies on a parchment-lined baking sheet. Note: Thinner cookies will be crunchier, while thicker cookies will be softer.
- Bake the cookies until golden, around 10-15 mins, depending on size and thickness.
